Terroir

A selection from the Domaine's old vines in different terroirs, in particular: En Sauvagny and Les Bruyères. Keuper iridescent marl soils.
Predominant southerly exposure.

 

Vinification and Ageing

Manual harvest.

The Poulsard grapes ferment in a temperature-controlled tank during the 10 days of maceration, before being transferred for ageing into large wooden tuns in our cool, 13th century cellars.

 

 

 

 

 

 

 

 

 

 

 

Jacques Tissot's Tasting Notes

Bouquet

Bright, deep coppery red in colour, perfectly clear.
A nose of ripe fruits (figs), dried fruits and red plums with the slightest wafts of menthol and eucalyptus.

 

Palate

Good volume on the palate, crisp and slightly tart. A impressive, forceful attack with a little sweetness, a hint of chocolate, and a well-structured finish.

 

Ageing Potential

From eight to ten years.

 

Wine and Food Pairing

Ideal with starters, cured meats, barbecues, grilled meats, poultry dishes, Raclette and cheese boards.
Best served between 12 and 14°C.
