Description

Terroir

A blend from various plots, notably Les Bruyères and La Mailloche, on Keuper iridescent marl soils. Vineyard predominantly south-east facing.

 

Vinification and Ageing

Manual and mechanical harvest.

The Poulsard ferments during an eight-day maceration in temperature-controlled tanks, before being transferred into large wooden tuns in our cool, 13th century cellars.

Bouquet

Light, coppery red in colour with bright, clear, orange highlights.

A pleasing nose of red berries and spices.

 

Palate

The attack is supple and delicate, with flavours of morello cherries and raspberries, giving way to a beautifully fresh, spicy finish.

 

Ageing Potential

From eight to ten years.

 

Wine and Food Pairing

Ideal with starters, cured meats, smoked Morteau sausages, grilled meats, poultry dishes, Raclette and cheeses generally, but also with any fish dishes or exotic cuisine.
Best served between 12 and 14°C.
