Arbois Vin Jaune (Yellow Wine)

- Vinification : Traditionnal vinification, then ageing under a natural veil of yeasts

- Maturing : 6 years and 3 months at least, in oak cask called "Pièce" of 228 l, without topping up nor racking.
Lost of 38 % Vol by natural evaporation . Size of the bottle : 62 cl . That's what it leaves of a liter of wine aged 7 years in the cask.

Tasting :
- Visual : Amber yellow colour
- Olfactory : Powerful aromas of green walnut, curry and black mushrooms, lightly woody.
- Gustatory : Fill very well the palate with a lot of fineness. Long persistancy.

Ageing :
- Superb now
- Possible to keep it ad infinitum

What to eat with it :
- Trout with almonds, cock with morels, foie gras, Cheese (Comté) shellfish and spicy cooking with curry and saffron, black chocolate.........
- Serve for aperitive with walnut, cheese or foie gras
Between 12 and 16 °C. Open one hour before consume.
May be kept several months opened.
