grape-variety "Savagnin" Cultivated on a marly soil, it is kept at least 6 years and 3 months under a veil of yeasts, without topping-up nor racking in oak barrels containing 228 liters called pièces . At the end, it will have lost 35 to 40 % of its initial volume by natural evaporation. The yellow Wine is always in bottle of 62 cl called Clavelin . It represents the number of centiliters which remains after the aging Of 6 years and 3 months. It can be aged several centuries and can stay opened during several months with a cork on it.This is a dry wine with aromas of green walnut, spices, curry, almond. It is so complex that it is part of one of the five greatest white wines in the world. You can drink it with walnuts, cheese of Comté , shellfishes, meats with cream and morels, foie gras, cooking with curry and saffron,black chocolate.... Open the bottle one hour before serving it from 12 to 16° C |

Vin de paille (Straw wine ) |
grape-variety "Poulsard"; "Chardonnay" et "Savagnin". The grapes are drying on a straw bed in wood cases during several months in cold attics. We obtain a grape very concentrated in sugar.The wine will age 2 at 3 years in oak barrels. 100kg of grape will give 18 liters of juice. It can be aged 50 years and has to be served at 8 C . It is a sweet wine wich can be consumed for aperitif, with foie gras, blue cheese or desserts. |

Cépage grape-variety "Savagnin". Harvest is done at the end of autumn. Partially dehydrated grape is concentrated in sugar and aromas. A slight botrytis completes perfectly the subtlety. Aged for several years in oak cask, it is a great sweet wine, with a limited production wich can be tasted when bottled and age numerous years. Someone says it can be drunk without anything else but it becomes sublime with Foie gras or a dessert.Temperature : 7 to 8 C |

grape-variety "Savagnin". Liquor-wine, it is obtained with Savagnin grape must fortified with Marc du Jura (kind of brandy made with skins ). Aged for several years in oak cask, It titres 17 C in alcohol. It can be drunk mainly for aperitive, first course or dessert. With aromas of fig and dry prune, it is excellent with Ham and melon, pastry and chocolate.Temperature : 4 to 8 C |
